Perrier Cocktail Recipe: The Salty Dog

Inspired by highball cocktails served in tall glasses with lots of ice, often composed mainly of fizzy water, 20 years later I decided to affirm my skills by revisiting one of the first cocktails I learned to make: The Salty Dog.
The concept is based on flavoring a single ice cube to replace all the ice piled into the glass that dilutes the flavor in the process. The ice cube is made partly of Perrier which, by its simplicity, refrains from altering the flavours I am trying to obtain in my recipes. It takes longer for the ice cube to melt in the drink which, in turn, makes it more enjoyable while adding flavor; and the taste continues to develop the longer it sits in the glass.
This entirely revisited version of the classic salty dog is served in a Martini glass as a short drink and is now characterized by molecular techniques that symbolize the Liquid Chef savoir-faire.
