Star Fruit: The Exotic Cocktail Garnish
If you have run out of apples and you need a pretty decoration, be sure to always have a star fruit to hand. Like apples, order them green and unblemished from your supplier. This fruit gives star-shaped slices which are simple to use and sit easily on the edge of a glass.
Technique: Cut three thin slices from a star fruit. Just like apples, the slices will stick together thanks to the natural pectin contained in the fruit. Arrange them in a fan. Make a cut in the first slice to fit the rim of your glass. Place the whole decoration on the glass and “finish off” by adding half a strawberry.
