Valentine’s Cocktail: A Pink Peck (On The Cheek)
Islington cocktail bar Wax Jambu has teamed up with Pink Pigeon Rum to create a Valentine’s cocktail which you can enjoy at the Upper Street bar or make for a loved one at home.
A Pink Peck (On The Cheek) fuses rum, vermouth, lime, strawberry and chilli. The fresh chilli gives the drink its aphrodisiac edge – perfect for Valentine’s Day.
Here’s how to knock one up at home.
Slice the chilli lengthways, about half way down the chilli, leaving a small 'hook' on one half to allow it to balance on the side of the coupette glass. Slice the other half and add to a shaker. Cut a spiral from the lime zest using a vegetable peeler. Set aside.
Slice the strawberry into 2 or 3 pieces, add to the shaker and muddle together with the chilli.
Add 37.5 ml of rum, 25ml of vermouth and I tsp of marmalade to the shaker, top with cubed ice and shake hard for 5 to 7 seconds.
Fine strain into the coupette, checking for any pieces of chilli that may have missed the strainer! Add the chilli and lime spiral for the garnish and serve.
Depending on your palate, experiment with the volumes of chilli and strawberry for perfect balance. Enjoy!
